It is a coupage without added sulphites and made naturally with Syrah and Cabernet Sauvignon from the plots of our estate located in the village of Méntrida.
Elaboration
Cold pre-maceration for 4 days. Alcoholic fermentation with indigenous yeasts and controlled temperature between 18 and 22 degrees. Selection table. Grapes with stems 30% and destemmed 70%. Macerations of between 20 and 30 days depending on plots and tanks. Gentle extractions by pumping over and delastage.
