Fermentations are carried out by separating the different plots in the villages of Méntrida and Real de San Vicente. We work with temperature-controlled stainless steel tanks and open wooden vats where our work is done without machines, exclusively by treading and manual work. We do not stabilize in cold, we do not clarify and we do not filter. Bottling is carried out with minimum doses of sulfur.
The wines are aged using only lightly toasted French oak barrels of between 500 and 3,000 liters in order to respect as much as possible the identity and personality of our wines and plots.
