Elaboration
Cold pre-maceration for 4 days. Fermentation with indigenous yeasts and controlled temperature between 15 and 22 degrees. Selection table. Grapes with stems 70% and destemmed 30%. Macerations of between 20 and 30 days depending on plots and tanks. Gentle extractions by pumping over and delastage.
